I am considering writing a book and in this book I would like to reprint some popular recipes (Hershey's, Nestle's, etc) that I have found in my own collection of cookbooks. I know that the ingredients list cannot be copyrighted, and I have read that the directions for the recipe can be re-written, altered etc. But I wanted to recognize the origin of the recipe at the bottom of each one. So, do I need to write to all of the companies from whom I wish to reprint their recipe and ask for permission?

There aren't any clear cut answers in copyright law. However, a listing of ingredients most likely do not comprise a "modicum of creativity" in order for copyright protection to attach. Further, you are correct that the descriptions may be copyrightable. Please note that not only is the exact wording of those descriptions within the recipes copyrightable, but also substantially similar phrasing would be.
If you are really concerned, I would suggest that you consult a copyright / IP attorney to assist you who can render you an opinion, once more specifics are disclosed. It is difficult to analyze things without knowing more specific facts.
